Tips For Buying Fresh Fish
01
Start off on the right foot. Ensure you are shopping in a reputable store or market.
02
Sniff away. Fish should not smell fishy. It should smell like the ocean or clean water. If the fish is smelly, back away.
03
Survey the many fish in the sea. You’re looking for firm, clean flesh and shiny scales that rest closely to the skin. The gills should be red and wet, not slimy or dry. If the flesh looks at all dull and/or the gills discolored, hold the line and walk on.
04
Gaze into their eyes. Fresh fish should have clear, bright, and slightly bulged eyes. If the eyes are cloudy, this indicates the fish is past its prime. Sunken eyes indicate a fish that is dehydrated.
05
Get touchy feely. If you press the flesh of the fish and the skin does not bounce back, move on down the line.
