Bite Me Bit
“There is no such thing as too many deviled eggs.”
- Jan Karon
1/2 cup mayonnaise
1 tsp Dijon mustard
1/2 tsp kosher salt
1/2 tsp fresh lemon juice
Additional ingredients for decorations (i.e. dill, dried blueberries, chives, carrots, green peas)
Cut eggs in half lengthwise and separate the yolks from the egg whites. Place the whites on a serving plate and mash all the yolks together in a small bowl. Stir in mayonnaise, Dijon mustard, salt and lemon juice. Spoon yolk mixture into a piping bag or plastic Ziplock bag and pipe the filling into the egg whites. Decorate as shown.
Yields 24 deviled eggs
TIP: Make bodies for your bunny friends by using half an EGGS2go! egg plus green beans and chopped carrots for the hands and feet.
